WILD RICE PILAF

As a die-hard rice lover, I have a soft spot for pilaf and classic white rice with just butter, salt, and pepper. I inherited this love from my beloved Grandma Christina, and every time I enjoy it, I think of her.


But let's be real: sometimes we need to mix things up! That's why I turn to the superfood that is wild rice. Not only is it a healthier option, but it's also believed to improve digestion, boost heart health, and even strengthen immunity.


Now, let me share one of my all-time favorite ways to savor wild rice. Admittedly, getting the perfect texture can be tricky, as it depends on the brand and your personal preference. I personally like a slightly al dente bite. And for a touch of sweetness and crunch, I often add dried cranberries, pecans, or almonds (though our daughter, Adrianna, insists that nuts have no place in any dish, not even dessert! So, they're optional). Trust me, this wild rice dish will have you hooked in no time!


You will need a sauce pan or sauté pan with a lid that fits well.


INGREDIENTS

  • 1 tbsp Olive Oil

  • 1 tbsp Unsalted Butter

  • 1/2 Onion, fine dice

  • 1/4 tsp Salt (omit if using chicken both with sodium)

  • 1 clove Garlic, minced

  • 1 and 1/2 cups Wild Rice

  • 2 and 3/4 cups Water or Low Sodium Chicken Broth

  • 1 Bay Leaf

  • 1 tsp Thyme

  • 1/4 cup chopped Pecans or sliced Almonds (optional)

  • 1/4 dried Cranberries (optional)

INSTUCTIONS

  1. Heat pan over medium heat, when hot add oil and butter. Be careful, if the pot is too hot the butter will pop and splatter

  2. When butter has fully melted, add onion and salt. Sauté until soft, about 3 minutes

  3. Add garlic and sauté for another 30 seconds or until fragrant

  4. Add wild rice, stirring frequently, let the sauté in the pan for 3-4 minutes

  5. Add broth or water, bay leaf and thyme. Bring to a gentle boil

  6. Cover pan with lid, set heat to low and simmer for 20 mins

  7. After 20 mins, check for doneness by fluffing with fork and tasting. If it needs another min or two, replace lid and let sit off heat for another 2-3 mins or until desired doneness. If the rice is not close being done, add 1/8 - 1/4 cup water, stir, replace lid and let sit on low heat for another 10 mins

  8. When desired doneness is achieved, remove bay leaf. Add, nuts and dried cranberries, if using.

  9. Fluff with fork.

TIP: If dinner is not quite ready, move the rice off the burner and replace lid but with a slight vent to let the moisture continue to escape.
